Pork Tenderloin served with a plum sauce.
This meal goes great with fresh green bean almondine, mashed sweet
potatoes, crisp lettuce salad.
Pork Tenderloin
Ingredients:
2-3 pound boneless pork tenderloin
Salt and pepper
Directions:
Preheat oven to 325 degrees. Salt and pepper both halves of pork
tenderloin. Tie boneless pork tenderloin halves together with string
about every 2 inches. Cook in a broiling pan on rack covering bottom
of pan with water. Cook for about 2 hours uncovered. Check pan
occasionally for water, add if necessary. Reduce oven heat to 225
degrees and tent cover with aluminum foil and roast for an additional
30 minutes. Remove from oven and let pork roast rest 15 minutes before
serving.
Serving, remove string from pork roast. Carve into ¼ inch slices.
Plum Sauce
(Plum sauce over pork tenderloin roast brings out the flavor of the
roast and compliments the green beans and sweet potatoes.)
Ingredients:
2 14.5 ounce cans chicken broth
1 12 ounce jar – Red Plum Preserves
Pepper to taste
Secret Ingredients (Call James and pay BIG BUCKS)
Directions:
Add pepper to chicken broth in saucepan. Reduce chicken broth to ¼
to 1/3 of original volume over medium heat. Add red plum preserves;
stir constantly until reduced to the consistency of syrup. Remove from
heat and cover. Let plum sauce cool for about 30 minutes before
serving.
Mashed Sweet Potatoes
Ingredients:
4-5 Medium sweet potatoes
2 Tablespoons butter
Heavy cream
Salt and Pepper
Directions:
Wash sweet potatoes and pierce several times with fork. Bake in
oven at 325 degrees with pork tenderloin for about 2 hours. Helpful
hint, line a cookie sheet with aluminum foil to bake potatoes on. When
done, potatoes will be very soft to the feel. Remove from oven, let
cool for a few minutes. Remove potato skins and place potato in
saucepan. Add butter and salt and pepper to taste. Add enough cream to
whip to consistency of mashed potatoes. Keep potatoes warm on low heat
until serving.
Fresh Green Beans Almondine
Ingredients:
2 Pounds fresh green beans
2 Tablespoons butter
Sliced or slivered almonds
Salt and Pepper
Directions:
Wash and cut ends off green beans. Place green beans in a
microwave safe dish. Sprinkle with salt and pepper and dot with
butter. Cook until al dente. Toast almond slivers in oven at 325
degrees for about 10 minutes. Stir occasionally. Remove almonds from
oven when they are light golden brown. Helpful hint – sprinkle salt in
bottom of pan before placing almonds in it – this keeps almonds from
sticking to pan. Sprinkle green beans with almonds at serving time.
