Rotisserie Style Chicken

 

 


Outdoors cooking always seems to taste best, especially the slow cooked items that attain the flavor of the grill.  Rotisserie Chicken is no exception.  It is a relatively inexpensive meal to prepare and tastes great.

Ingredients:

Marinade
½   Cup Oil
2    tb Honey
2    tb Lime juice
½   ts Paprika
1    tb Season salt

Chicken
3 ½ lb Whole chicken
Onion chunks
Unpeeled apple wedges
Chunks celery

Directions:

Marinade
Mix all ingredients well in saucepan and warm just to melt honey.

Chicken
Fill the cavity with apple, onions and celery. Place some of the marinade in the cavity. Attach chicken to rotisserie bar and tie legs together with string.

Rotisserie chicken about 2 ½ hours total, baste with marinade several times in the last hour.

Let rest about 15 minutes before serving.
